Bread Pudding With a Difference

Ingredients:

• 2 cups milk
• 2 tbsp butter
• 1 tsp vanilla
• 1/3 cup sugar
• Pinch of salt
• 8–10 slices of bread, crust removed
• 2 eggs, beaten

Method:

1. Heat oven to 200C.
2. In a small saucepan, add milk, butter, vanilla, sugar and salt. Heat till butter melts, then allow to cool.
3. Butter a baking dish.
4. Line with bread slices. Tip: you can add jam or Nutella to the slices, or stewed fruit in between the layers of bread. Just finish with bread on top.
5. After milk mix has been cooled, add eggs and whisk.
6. Pour the mixture over the bread.
7. Bake for 30–45 mins until the custard is set and a little wobbly and the edges of bread have browned slightly.
8. Serve warm.
