Apple Crumble for Under $2 a Serve

Ingredients:
- 1 can of ginger beer – $1.35
- 4 apples/diced – $0
- 100g dates – $0
- ½ pack Scotch Fingers – $1.85
- 2 tbsp butter – $0
Total: $3.15
Makes 4: $0.78
Equipment:
- 4 rice cups
- 2 large containers
Tip:
Place Scotch Fingers into a large container and use a peanut butter jar (lid part) to crush the biscuits.
Add plum jam for a richer flavour.
Method:
- Peel and core four apples/dice.
- In a large container put diced apples and the ginger beer into a microwave for 15–20 minutes, stirring occasionally.
- Add dates and cook for another 5 minutes.
- In another container, place half a pack of Scotch Fingers in and crush them.
- Add butter, microwave it for 10 seconds and then mix and combine.
- Place mix onto a hot flat Breville and cook till golden brown. Remove and cool down.
- Spread apple and dates, mix evenly into the four rice cups and evenly spread the biscuit crumbs on top.
- Enjoy!
