Add yoghurt to the milk bottles and then put them in a warm/semi-hot water bath for 2 hours making sure to keep changing the water so the milk holds the heat.
To make yoghurt, the milk mix needs to be at body temp for 8 hours to form into yoghurt. Fold a towel long ways and place it in the brown bag so you can sit the bottles in the middle.
Stand two hot water bottles up in the bag, then lay the milk bottles sideways (against the hot water bottle).
Cover with the towels and store somewhere dry and warm!
After 8 hours, using old bed sheets or a pillowcase, drain the whey off by hanging it somewhere you can catch the whey.
Now, once you have cleaned up, you can start on your base.
Crush the 3 bags of choc-chip cookies, then melt the margarine/butter.
Cut open the brown bag down the seams and line the Scrabble board box (36cm x 26cm).
In the large bowl add the Pasito, then microwave for 1.5 hours making sure you don’t burn it towards the last 5 mins.
Once reduced down to a syrup, put a small bit aside for a garnish at the end!
In the large bowl add the choc-chip cookies and ⅓ of the margarine then start mixing, adding more margarine as it’s needed.
Once the cookies start forming like wet sand, add the mix to the Scrabble box and press the base out with the Scrabble board and then refrigerate until needed.
Now to speed things up with the curd.
Wrap the sheets up with towels only after the curd has dropped by at least ⅓ or ½ of its original size. (Have 6-8 towels on hand for this part).
You must wash everything with disinfectant to stop any bacteria growth in the sheets and towels, and make sure to clean where your sheets were hanging!
Once the curd is somewhat dry and creamy, lay the sheets out on your kitchen bench or your table!
Using a ruler, scrape the curd into the bowl with the Pasito syrup, then start mixing until most of the lumps are gone.
Add the sugar sachets or sugar syrup! And then whisk until it’s nice and smooth.
Finally, bring the curd and the base together, and level the curd out with a ruler as best as you can!
Using a fork, make a wave pattern on top of the curd, finish with the Pasito syrup as your garnish, then refrigerate for a few hours (the more time in the refrigerator the better it sets).
Once done, cut into 6cm x 6½cm slices for you and 23 of your friends.
